I wonder when I should use words such as proportion, percentage, number, amount, level … in the plural form. For example:

1. The percentages/percentage of boys in 6-11 and 12-16 age groups participating in basketball were/was 89% and 78% respectively.

2. The proportion/proportions of Vietnamese people living under the line was/were 20% and 5% in 1980 and 2010 respectively.

3. The number/numbers of grades 9 and 10 are 200 and 300 respectively.

4. The amount/amounts of beef and fish used was/were 10 grams and 20 grams respectively.

Please help me understand the mechanism of this one. Thank you!

"The Bar Chart illustrates the amount of money spent by the French and British on five consumer products ( Cars, Computers, Books, Perfume and Cameras) in 2010. The currency used is Pounds Sterling."

Introduction: The chart illustrates the amount of money spent on 5 consumer goods in France and the UK in 2010. Units are measured in pounds sterling. Overview: Overall, the expenditure of the UK was higher than that of France. For the introduction in writing task 1:

if the y-axis is in the form of (percentage %) and I need to add a second sentence like 'Units are measured in the form of percentages' I believe it's not correct, if not what could I write instead.
